PASSOVER CHEESE LATKES 
3 eggs, well beaten
1 c. milk
1 c. pot cheese
1 c. matzo meal
3/4 tsp. salt
1/2 tsp. cinnamon
1 tbsp. sugar

Beat together the eggs, milk and cheese. Combine the remaining ingredients and add to egg mixture; blend well. Drop by tablespoons into a hot, well greased frying pan and brown on both sides. Serve hot with sour cream or applesauce. Yield: 16 at approximately 70 calories each using 1 tablespoon butter for frying.
