PASSOVER LATKES 
1/2 c. chopped onion
2 tbsp. oil
3 eggs, beaten
3/4 c. water
1 1/2 c. chopped cooked meat (beef, veal, or turkey)
1 1/4 c. matzah meal

Saute onions in oil until tender. Combine eggs and water. Add onions, meat, and matzah meal. Drop by tablespoon into 1 inch deep hot oil and fry until golden brown. Drain on paper toweling.

Makes 8 latkes. Serve hot or cold; may be spiced as desired - garlic, curry, allspice.
