WILTED WINTER SALAD 
2 heads strong tasting hearty greens
2 hard cooked eggs, chopped
1/4 lb. mushrooms, sliced
1 red onion, thinly sliced
8 slices bacon, crisply cooked
1 onion, minced
1 lg. garlic clove, minced
1/2 c. apple cider vinegar
2 tbsp. sugar
1 tbsp. catsup

Wash and dry lettuce and toss with eggs, mushrooms and sliced onions. Cook bacon and drain on paper towel, but save about 1/3 cup of the fat. Saute the minced onion and garlic until softened. Add vinegar, sugar and catsup to the pan. Season to taste with salt and pepper. Whisk until smooth. Pour the hot dressing over the greens; toss well and garnish with crumbled bacon. Serve immediately. Serves 4.
