WINTER SALAD MOLD 
2 env. unflavored gelatin
1 (6 oz.) frozen grapefruit juice concentrate, undiluted
3 ice cubes
1 (1 lb.) can grapefruit sections, undrained
1/2 c. diced celery
1/2 c. diced unpared red apple
Salad greens

Sprinkle gelatin over 3/4 cup cold water in medium saucepan. Let stand 5 minutes to soften. Over low heat, stir gelatin until dissolved. Remove from heat, add grapefruit juice and ice cubes, stir until ice is dissolved.

Add grape fruit, celery, and apple, Turn into 1 quart mold. Refrigerate until firm, 2-3 hours. To unmold, run a small spatula around edge of mold. Invert over platter. Shake gently to release. If necessary place a hot wet dishcloth over bottom of mold. Shake again to release. Garnish with salad greens. Makes 6 servings.
