WHIPPLE HOUSE HEAVENLY CHOCOLATE
PIE
 
1 unbaked pie shell

Meringue Layer:

2 egg whites
1/2 tbsp. vinegar
1/4 tsp. salt
1/4 tsp. cinnamon
1/2 cup sugar

Beat egg whites, vinegar, salt and cinnamon together until stiff but not dry. Gradually add sugar. Beat until very stiff. Spread over shell. Bake at 325°F for 15 to 18 minutes. Cool.

Chocolate Layer:

1 (6 oz.) pkg. chocolate chips
2 egg yolks
1/4 cup cold water

Melt chocolate chips over hot water. Blend in egg yolks which have been beaten with 1/4 cup cold water. Stir until smooth. Spread 3 tablespoons of chocolate over meringue. Chill the rest.

Topping:

1 cup whipping cream
1/4 tsp. cinnamon
1/4 cup sugar

Whip cream until stiff. Add cinnamon and sugar. Spread half of this mixture over chocolate layer in shell. Fold in chilled chocolate into whipped cream and combine until smooth. Spread over center of pie. Chill 4 hours before serving. Delicious!
