CHICKEN AND SAUSAGE DINNER | |
1 (2 1/2 to 3 lb.) fryer or roasting chicken 1 1/2 lb. Italian sausage 1 bunch fresh broccoli, cut into spears and blanched 3 minutes 2 lg. red peppers, sliced 1 inch 2 onions, sliced 2 cans whole cooked potatoes, browned lightly in oil 3 tsp. Italian seasoning Salt Pepper Cut chicken into small pieces. In a little oil, brown chicken lightly on both sides. Reserve pan drippings. Pinch sausage with a fork and brown using same methods as the chicken. After sausage has browned, cut into links. Reserve pan drippings. Place browned chicken and sausage together in large roasting pan. Add 1 1/2 teaspoon Italian seasonings and salt and pepper and reserved pan drippings. Mix together. Cover and bake at 350 degrees for 45 minutes. Remove chicken and sausage from oven. Add to chicken and sausage, blanched broccoli, sliced peppers and onions, browned whole potatoes, 1 1/2 teaspoon Italian seasonings, salt, and pepper. Mix all together gently. Cook uncovered for 30 minutes at 350 degrees or until vegetables are just tender. Stir gently several times to cook evenly. If starts to dry out cover with foil. Serve on large oval platter. |
