STRAWBERRY CREAM CHEESE PIE 
Crust:

1 1/2 c. graham cracker crumbs
1/4 c. brown sugar, firmly packed
1/2 tsp. cinnamon
6 tbsp. butter, melted

Mix crumbs, brown sugar, cinnamon and butter together in a bowl. Press onto the bottom and sides of a 9-inch pie plate, building up a slight rim at the edge.

Filling:

1 (8 oz.) pkg. cream cheese, softened
1/2 c. sugar
3 eggs
3 tbsp. all-purpose flour
1 c. applesauce
1/2 tsp. cinnamon
1 tsp. lemon peel, grated
1 tbsp. lemon juice

Beat cream cheese and sugar together until smooth. Beat in eggs, one at a time, until the mixture is light and fluffy. Blend in flour, then applesauce, cinnamon, lemon peel and juice. Pour filling into prepared crust. Bake at 350°F for 35 to 40 minutes or until the filling is set in the center. Cool, then chill the pie before serving.

Topping:

1 pint fresh strawberries, chilled
light corn syrup

At serving time, cut strawberries in half and arrange on top of pie. Brush with corn syrup.
