ROASTED POTATOES 
6-8 lg. baking potatoes
1/2 c. melted butter
4 tbsp. bread crumbs
4-5 tbsp. Parmesan cheese

Peel potatoes, slice crosswise into 1/8" slices. Slice to within 1/2" of bottom of potatoes. Put a thin layer of melted butter on the bottom of a baking dish, place potatoes cut side up in the dish. Pour some of the melted butter over them and bake for 30 minutes at 400 degrees. Take out and sprinkle the bread crumbs over the potatoes and pour over remaining butter. Bake for 20 minutes more. Remove and sprinkle the Parmesan cheese over, bake for 5 minutes more.

If potatoes are very large increase the first baking time by 10 minutes. More bread crumbs and more Parmesan cheese may be used, also flavored croutons crushed are good.
