BREADED PORK CHOPS 
4 pork chops (boneless works well too)
1 egg
1 tsp. milk
10 saltines
4 med./lg. potatoes
1 can cream of mushroom soup
1/4 c. onion, chopped or dried minced onion to taste
Vegetable oil as required

Preheat oven to 350 degrees. Peel and slice potatoes. In 2 quart baking dish, mix potato, onion and soup. In small bowl, beat egg and milk. Crumble crackers with rolling pin. Dip chop in egg mixture, then coat with cracker crumbs. Brown breaded chops in iron skillet and hot oil. Gently lift with spatula and place on top of potatoes. Cover and bake at least 1 1/2 hours. Bake thicker chops longer.
