CHEESE STUFFED MANICOTTI 
1/4 c. chopped onion
1/4 lb. chopped fresh mushrooms
2 tbsp. butter
16 oz. creamed cottage cheese
8 oz. shredded Mozzarella cheese
1/2 tsp. salt
1/8 tsp. pepper
2 beaten eggs
1/2 tsp. nutmeg
20 oz. cooked, drained, chopped broccoli
8 oz. manicotti, cooked, cooled and drained
Parmesan cheese
Parmesan sauce (recipe follows)

Saute onions and mushrooms in butter. Add eggs, cheeses, spices and broccoli. Fill manicotti with cheese mix. Arrange manicottis in greased baking dish. Cover with Parmesan sauce, then sprinkle with Parmesan cheese. Bake, covered for 15 minutes at 350 degrees, then uncover and bake an additional 20 minutes.

PARMESAN SAUCE:

Melt in saucepan 1/4 cup butter, 1/4 cup flour, 1 teaspoon salt. Stir for a minute or so, then slowly add 3 cups milk, stirring until thickened. Then stir in 1/3 cup Parmesan cheese.
