CHEESE STUFFED MANICOTTI | |
6 manicotti shells 1 1/2 c. shredded Mozzarella cheese (6 oz.) 1 c. cream style cottage cheese 1/3 c. grated Parmesan cheese 2 beaten eggs 1/4 c. snipped parsley 1 tsp. instant minced onion 1 (15 oz.) spaghetti sauce with mushrooms Preheat oven to 350 degrees. Cook manicotti according to package directions. Drain. Combine 3/4 cup Mozzarella cheese, cottage cheese and Parmesan cheese. Stir in eggs, parsley and onion. Pour 2/3 cup sauce mixture into 10"x6"x2" baking dish. Open shells and fill with cheese mixture, using about 1/4 cup for each shell. Arrange in baking dish. Pour remaining sauce over. Sprinkle with remaining Mozzarella. Bake, uncovered at 350 degrees until bubbly and heated through, about 35 minutes. Serves 4. |
