THREE CHEESE MANICOTTI 
1 1/2 c. water
1 (8 oz.) can tomato sauce
1 pkg. spaghetti sauce mix
1/2 c. grated Parmesan cheese
1/4 c. snipped parsley
2 c. shredded Mozzarella cheese
1 c. cottage cheese
2 beaten eggs
8 manicotti shells, cooked and drained

In small saucepan, blend water, tomato sauce and spaghetti sauce mix. Simmer, uncovered for 10 to 12 minutes. Meanwhile combine one cup of the Mozzarella, the cottage cheese and the Parmesan cheese. Add eggs, parsley and 1/8 teaspoon pepper, mix lightly. Stuff manicotti shells with cheese mixture using 1/4 cup mixture for each. Pour 1/2 cup of spaghetti sauce into 2 quart baking dish. Arrange stuffed manicotti into dish, pour remaining sauce over top. Sprinkle with remaining 1 cup Mozzarella. Bake uncovered in 350 degree oven for 25 to 30 minutes or until bubbly.
