NOODLES WITH SPICY PEANUT SESAME
SAUCE

1 (10 oz.) dry pasta, spaghetti or capellini
1/4 c. smooth peanut butter
3 tbsp. sugar
1/4 c. soy sauce
3 tbsp. sesame oil, toasted (from oriental grocery)
1 tbsp. garlic, minced
3 tbsp. corn oil
1 tsp. chile pepper flakes, or to taste
Garnishes: slivered carrots, green onions, red peppers, toasted sesame seeds, etc.

Cook pasta al dente in a large pot and drain, rinsing with cold water. Let drain for 10 minutes. Whisk together the remaining ingredients (easier if heated slightly). Toss noodles with sauce. Let stand at room temperature for at least four hours before serving. Toss again right before serving and arrange noodles on a plate with any or all of the above garnishes.
