CANNED APPLE PIE FILLING 
4 1/2 c. sugar
1 c. cornstarch
2 tsp. cinnamon
1/4 tsp. nutmeg
1 tsp. salt
1 c. water
3 tbsp. lemon juice
6 lbs. apples (tart), do not cook

Stir and cook all ingredients together in a large pot until bubbly. Add lemon juice. Peel and slice apples and pack into 5 to 7 quart jars. Fill with hot syrup. Adjust lids and seal. Process in boiling water 20 minutes. Quart will fill 9 inch pie shell.
