This sounds fantastic - I love that it's flourless, sugarless, and eggless. Can we still give it a name, though? Can we call it a Healthy Pancake Recipe ? many thanks, Michael

This is an amazing recipe! I've shared it with dieters, healthy eaters, and vegans alike. Everyone is impressed. It is so easy, it lends itself to personalizing. I use all kinds of dried fruits and I've even used mashed sweet potato instead of bananas (my kids liked that version a lot). It's such a healthy recipe, you don't have to feel guilty eating these cookies at all. Have as many as you like. Thanks so much for sharing the recipe!

I like this recipe, albeit modified due to my acid reflux and digestive issues. Successfully substituted lard (healthy, digestible, monounsaturated), butter or coconut oil (healthy, digestible saturated), because I do not ingest hard to digest vegetable oils (e.g. corn - ever). Since raisins don't agree with me, I have substituted the raisins with "crispy nuts" (pre-soaked in celtic sea salt (course, grey, unbleached) 8 to 10 hours to get rid of phytic acids, then dried and stored in fridge). F.Y.I. healthy monounsaturated oils include: olive oil, sesame oil, peanut oil, and yes, good old fashioned lard. Healthy, digestible, saturated fats include coconut oil, egg yolks and butter.
Also, polyunsaturated fats: less than 1 tbsp of a combination (i.e. 1 to 3 tsp depending on your calorie intake) include: cod liver oil (1 to 1.5 tsp daily), flax oil, evening primrose oil & black currant or borage oil.
AVOID these polyunsaturated, vegetable oils: safflower, corn, sunflower, grapeseed, soybean and cottonseed.
Hope this info helps you. Healthy eating has become my passion, a necessity for me to feel as good as possible! Enjoy whatever version of this recipe works for you.

I make this a lot for my daughter and add in mini chocolate chips and she loves them but now my question is has anyone ever tried freezing them? She lives out of town and I made them ahead of time.

Can the banana be replaced with anything else? All while keep with the no flour, sugar or eggs.
