NO EGG OATMEAL COOKIES 
1 c. butter
1/2 c. sugar
1/2 tsp. vanilla or lemon extract
1 1/2 c. oats
1 c. flour
1/2 tsp. baking soda

Roll into balls; flatten with fork. bake at 375 degrees for 10 or 12 minutes; sprinkle with powdered sugar.

I made these cookies today. They were awesome! I didn't sprinkle with powdered sugar and only had self rising flour so i ommited the baking soda. They were still very simple and easy and had great taste! The dough was too sticky to roll into balls so I just spooned them onto baking sheet. Very good recipe to do with kids too!

Batter is too soft so the cookies burned. I added less butter and half a cup brown sugar and they were amazing!

Make sure that you flatten the cookies. They will for sure burn. I also changed 375°F to 350°F. I really can't stop eating the dough. But I'm one of those people who makes brownies just to eat the mix.

Thank you for sharing. Was hungry for cookies and didn't have eggs. Found this recipe. Changed it a little before making them after reading the reviews. I did 1/4 c. sugar and 1/4 c. packed brown sugar, and 3/4 c. butter. I was able to make them into balls to fatten with a fork. You can thumb print them and add your favorite jam to the middle before cooking. For kids you can frost with Nutella. You can even eat the cookie dough! YUMMY! Yes it is a keeper. :)

I took recommendations from Marie and substituted almond extract as I didn't have vanilla. Discovered a rather bland cookie. Next batch I added cinnamon and did some thumbprints with apple jelly and orange marmalade, they are delicious. Nutella would be great. Make sure to flatten balls.

I made these cookies the other day and wow were they good. My fiance loved them so much that i am making another batch today. I used cinnamon instead of vanilla and they tasted great.

Good recipe! For the sugar I did 1/2 white and half brown, then I used 1/2 coconut oil and 1/2 butter, added flaxseed, almond extract. sliced almonds and an 1/8 tsp on godiva white chocolate liqueur....brushed a little agave and honey when they came out of the oven ...let them cool ~ OMGosh, they were soooooo good.

If you put the dough in the freezer for a couple minutes it is easier to roll into balls and the dough doesn't spread as much. Also very good if you add chocolate chips.

I made these with less butter and added a bit of brown sugar as someone else had suggested. The cookies were good, but very sweet and extremely buttery (even though i used less than recommended). The cookies didn't hold its shape in the oven, instead spread out a lot and got very thin. I guess without the eggs it just doesn't hold up as well. perhaps next time I should just add more flour/oats to the ratio and that would be better.
