NO EGG OATMEAL COOKIES 
1 c. butter
1/2 c. sugar
1/2 tsp. vanilla or lemon extract
1 1/2 c. oats
1 c. flour
1/2 tsp. baking soda

Roll into balls; flatten with fork. bake at 375 degrees for 10 or 12 minutes; sprinkle with powdered sugar.

Awesome! Found this is searching for no egg oatmeal cookies. I used 1/4 cup each brown & white sugar, 1/3 cup butter, 1/3 cup rice bran oil (what I used for baking oil), and 1/3 cup peanut butter. I think I added a touch more peanut butter to bind it into balls. They taste awesome! They're a bit delicate and next time I'll probably cut the white sugar down a bit.

I cut the butter by half (all I had left of spreadable to be honest) and used a single serving of cinnamon applesauce... oh my gosh so good. It's how I'll make these from now on... and I will make them often!!!

First time i did the recipe as stated, only I did it at 350°F as recommended in a comment & I only had vegan margarine. I flattened them too much & they turned out as tasty giant flat squares. I used the lemon extract & didn't add powdered sugar.
Second time I made them I used 1/2 coconut oil & 1/2 vegan margarine, skipped the extract, and added a sprinkle of crushed Skor chocolate bar before putting it in the oven. I only flattened them a little bit & they turned out way better.
I'm gonna try peanut butter next, then chocolate syrup next, then fruit in the middle, then cinnamon, then Nutella, then I might try pumpkin around Halloween. These are so versatile & the recipe is so simple. Love it! Thanks a lot for posting, and thanks to the comments, I never would have thought to change it up so much! I never bake!

I don't think you can mess up this recipe; reading it offline, I was going to cut it in half, but didn't have on my glasses - turned out, I had 1/4 c. butter and added a heaping tablespoon of coconut oil, added 1/4 brown sugar, and 1 tsp. vanilla, I threw in my raisins and coconut, baked 350°F for 12 minutes - absolutely perfect and delicious!!

I have an egg intolerance, so I love egg-free baking recipes. Based on some other reviews I made the following modifications to the recipe, and it turned out great!

3/4 cup of butter instead of a full cup
1/4 cup of sugar
1/4 cup of honey
Added 1 tbsp flaxseed meal
Added a sprinkle of cinnamon
Added about 1 tbsp of water when I was bringing the batter together, because it was a little dry (I used extra thick oats)

Next time I think I'll add some raisins too, because who can resist chewy oatmeal-raisin cookies?

I'm glad I doubled the recipe, I ate so much of the dough... I substituted coconut butter for half the butter, and they turned out like oatmeal shortbread in consistency. I am glad I tried this recipe, by adding coconut butter I created the best oatmeal cookies I ever ate! =D

Great Recipe! I tweaked it a little bit though. I had a huge craving for oatmeal cookies and I didn't have any eggs. So I whipped up this batch. I had two tablespoons of matcha powder, did half white sugar and then half brown. I also reduced the amount of butter to 3/4 cup.

I just made the batter, roll them into balls, flatten them with a fork and put them in the oven. I will put him to the taste as soon as the first batch is done but so far so good. I did add cinnamon and brown sugar but mine are holding up very well.
