SWEET POTATO PECAN PIE 
2 c. cooked, mashed sweet potatoes
1/2 c. brown sugar
1/2 c. granulated sugar
1/4 tsp. salt
1/8 tsp. ginger
1/4 tsp. cinnamon
1/4 tsp. maple flavoring
4 eggs, lightly beaten
1 c. chopped pecans
1 unbaked 9-inch pie shell

Preheat oven to 375 degrees. In large mixing bowl thoroughly combine potatoes, sugars, salt, spices and flavoring. Add eggs, beat vigorously until combined. Stir in pecans. Pour into pie shell. Bake for 45 minutes, reduce heat to 325 degrees and bake for an additional 10 minutes.
