1 bunch green onion, chopped finely 3 tbsp. olive oil 1 1/2 lbs. green beans 2 tomatoes, peeled and chopped 1 clove garlic minced 1/4 c. finely chopped parsley Salt and pepper Using a heavy saucepan, saute onions in oil until glazed. Cut off the tips of the green beans and slice in half lengthwise; add to the onions along with tomatoes, garlic, parsley, and salt and pepper to taste. Cover and simmer for 20 minutes or until tender. Serves 6. |
