CRANBERRY CASSEROLE FOR THE HOLIDAYS | |
3 c. chopped apples 2 c. raw cranberries 1/2 tsp. grated orange peel 1/2 c. quick cooking oats 1/3 c. chopped pecans 1/2 c. brown sugar 3 tbsp. melted safflower/sunflower butter Vegetable cooking spray Mix apples, cranberries and orange peel and pour into a baking dish coated with vegetable cooking spray. Mix remaining ingredients together and pour over fruit. Bake at 325 degrees for 45 minutes. Nutritional Analysis: Serving size 1/8. 155 calories; 0 mg cholesterol; 53 mg sodium; 147 mg potassium; 5.7 gm fat, 31% calories from fat, 1.9 gm polyunsaturated, .7 gm saturated.
