HOT CHICKEN SALAD WITH CREAM
PUFFS
 
2 c. cut up chicken (or turkey)
2 c. celery
1/2 c. slivered almonds (optional)
1/2 tsp. (or more) grated onion
1 c. mayonnaise
2 tbsp. lemon juice
1/2 c. grated cheese
1 c. crushed potato chips

Combine all ingredients except cheese and chips. Pile into hollowed out cream puffs; place cheese and chips on top of mixture. Bake 10-15 minutes in 400 degree oven. (Check oven temperature, ovens may vary.)

CREAM PUFFS:

1 c. boiling water
1/2 c. shortening
Salt
1 c. flour
3 eggs

Preheat oven to 400 degrees. Add shortening and salt to boiling water, stir until mixture boils. Add flour and mix. Remove from heat and add eggs, one at a time, beating after each egg. Put on ungreased sheet, 1 tablespoon at a time. Bake 20 minutes at 400 degrees then 20 minutes at 350 degrees. Cool.
