CHIPOTLE SALSA (WITH / WITHOUT
FRUIT)
 
1 can stewed tomatoes (and juice)
1 can rotel tomatoes (med)(and juice)
1 clove fresh garlic, diced
1/2 purple onion, chopped
1 jalapeno, seeds removed, chopped
1 fresh lime, squeezed
1 chipotle pepper, seeds removed
bunch of fresh cilantro, diced
1 tbsp. sugar (more if desired)
1 tsp. cumin
1 tsp. sea salt, diced

Cantaloupe or mango may be added for a fruity salsa or grilled salmon topper.

Put ingredients except salt and sugar in food processor or Magic Bullet and pulse until almost creamy. Pour into salsa bowl and adjust salt and sugar to your preference. Now, you may add diced cantaloupe or mangoes for a great salsa topper. Let sit for 1 hour in frig and 10 minutes out for best taste. For mild salsa that teenagers can't get enough of, omit the peppers and fruit. ENJOY.
