ORIENTAL CHICKEN SESAME SALAD 
2 c. cooked chicken cut in julienne strips
2 tbsp. salad oil
2 tbsp. soy sauce
1 clove garlic, crushed
1 tsp. grated lemon rind
3 c. spinach leaves, cut in strips
3 c. thinly sliced Chinese cabbage
1 tbsp. lemon juice
2 tbsp. toasted sesame seeds

Marinate chicken several hours in 1 tablespoon soy sauce, 1 tablespoon oil, garlic and 1/2 teaspoon lemon rind. Just before serving, toss spinach and cabbage with remaining soy sauce, oil, lemon rind, lemon juice. Add chicken and sesame seed.
