CRUMMY APPLE PIE 
2 1/2 c. flour
1/2 c. brown sugar, packed
1/2 c. rolled oats
1/2 lb. butter, softened (2 sticks)
10 to 12 apples; McIntosh or Granny Smith, peeled, cored, sliced
1 c. sugar
1 tsp. apple pie spice or cinnamon
3 tbsp. cornstarch
1 1/2 c. cold water

In bowl, combine flour, brown sugar and oatmeal. Cut in butter with pastry cutter until mixture resembles small peas. Put 2/3 of crust in bottom of 13 x 9 inch pan, spreading evenly. Spread apple slices over crust and set aside. In a small saucepan, mix sugar, apple pie spice or cinnamon, and cornstarch. Place over medium heat and gradually add cold water, stirring constantly. Bring to a boil. Immediately pour over apples. Sprinkle with remaining crumb mixture. Bake at 350 degrees for one hour. Let cool and cut into squares.
