COCONUT CAKE | |
1 c. oil 3 eggs 2 c. sugar 2 c. flour 2 tsp. baking powder 1 1/2 tsp. vanilla 1 1/2 c. milk 1/4 tsp. salt 1/2 tsp. yellow food coloring Mix all ingredients and pour into greased and floured cake pans; bake at 350°F for 35 to 40 minutes. 7 Minute Frosting: 3/4 c. sugar 1 tsp. vanilla 1/4 tsp. cream of tartar 1 egg white (unbeaten) 1/4 c. boiling water 1 large pkg. flaked coconut Mix ingredients together and then add water. Beat with electric mixer until stiff. Spread on cooled cake and then sprinkle the coconut over the icing. |
