MAPLE YAM CUSTARD PIE 
Unbaked 9" pastry shell
2 eggs, slightly beaten
3/4 tsp. salt
1 1/2 c. cream
1 1/2 c. mashed yams or sweet potatoes
1/2 c. firmly packed brown sugar
2 tbsp. maple syrup
1/2 tsp. cinnamon
1/4 tsp. nutmeg
1/4 tsp. allspice

Blend eggs with salt and cream in a small bowl using beater. Mix yams, brown sugar, maple syrup and blend of spices in large bowl. Beating thoroughly, gradually add eggs and cream mixture to the spiced yams, beating until blended. Pour into pastry shell, bake at 425 degrees for 15 minutes. Reduce oven temperature to 350 degrees and continue to bake 30 to 40 minutes until center is firm. Serve with whip topping.
