POACHED FISH FILLETS 
4 fish fillets (1-1 1/4 lb.)
1/2 c. tomato juice
3 tbsp. butter, cut into 1/4" pieces
2 tbsp. finely chopped green onions
1/4 tsp. salt
1/4 tsp. pepper

Fold fillets in half and arrange in a small, shallow baking dish, thicker portions toward the outside of the dish. Pour on tomato juice; dot with butter and sprinkle on chopped onion, salt and pepper. Cover. Microwave at power level "cook" for 5-7 1/2 minutes or until the fish flakes easily with a fork.

Since microwave ovens vary in power, you may need to adjust your cooking time.
