POACHED FISH WITH TOMATOES 
2 lbs. cod or haddock fillets
32 oz. stewed tomatoes
3 tbsp. fresh basil
3 tbsp. olive oil
1/4 c. water
1/4 c. white wine

In a large skillet, heat the oil, water and wine. Add the fish and freshly ground black pepper to taste. Cover and simmer until fish is almost cooked (10 minutes). Add tomatoes and basil. Heat through and serve. Serves 4.
