TOMATO - FISH CHOWDER 
4 tsp. olive oil
2 cloves garlic, minced
1 (1 lb.) can tomatoes, chopped with juice
1 tsp. crumbed dry basil
1/2 tsp. crumbled dried oregano
Pinch of cayenne pepper
1/2 c. chicken broth
3 c. water
1/2 lb. cod, cut into bite-size pieces
2 tbsp. minced parsley

In large heavy saucepan, heat olive oil over moderate heat; add garlic, tomatoes, basil, oregano, cayenne pepper and chicken broth and cook uncovered for 10 minutes. Add water, cover and bring to simmer, about 3 minutes. Mix in cod and cook uncovered 5 minutes longer. Sprinkle with parsley to serve. Serves 4.
