FISH WITH MUSHROOMS AND TOMATOES 
2 lb. sole, flounder, scrod, or whitefish
1/2 tsp. salt
1/4 tsp. white pepper
1/2 tsp. garlic powder
2 c. sliced mushrooms
2 tsp. freshly squeezed lemon juice
1 onion, thinly sliced
1 (16 oz.) can tomatoes, drained and chopped
4 tbsp. melted butter
1/2 c. seasoned bread crumbs
1/4 c. freshly grated parmesan cheese

Arrange fish fillets in a greased 9 x 13 inch baking dish. Season with salt, white pepper and garlic powder. Toss mushrooms with lemon juice, arrange over fish. Add onions and tomatoes. Bake at 350 degrees for 15 minutes. In a separate bowl combine melted butter, bread crumbs and parmesan cheese, sprinkle over fish. Broil fish until brown, about 10 minutes.
