“COLE SLAW” IS IN:

COLE SLAW 
Cole slaw is one of the easiest salads to prepare and is a popular side dish in the Summertime as it is easy to bring along for day trips and picnics and is served at room temperature.

Vegetables:

1 large head of cabbage
1/2 cup seeded and chopped green and/or red pepper
2 tablespoons minced roasted pimiento (optional)
shredded or julienned carrot strips

Dressing:

1/3 cup tarragon vinegar
2 tablespoons sugar
1/2 teaspoon prepared horseradish (optional)
1/2 teaspoon salt
1/4 cup mayonnaise
1/4 cup heavy cream
1/4 teaspoon celery seed
freshly cracked black pepper, to taste
1/4 teaspoon paprika

Wash vegetables. Shred the cabbage and soak in lightly salted ice water for 30 minutes. Drain and dry thoroughly. Add dressing and toss to coat evenly. Marinate for 1 hour. Drain, squeezing out any excess liquid.
