HOT SLAW 
1/2 small red cabbage
1 large carrot
2 red-skinned apples
1 tbsp. lemon juice
1 red onion
3 oz Cheddar or Jack cheese, grated

TO GARNISH:

red chili strips
carrot strips

DRESSING:

3 tbsp. mayonnaise
3 tbsp. yogurt
3 garlic cloves, crushed
1 tsp. paprika
1/2 tsp. chili powder
pinch cayenne pepper
salt and pepper

In a large plastic bowl with a tightly fitting lid, combine ingredients for salad. In a small bowl or blender, mix together ingredients for dressing. Pour over salad and mix well. Refrigerate for 2 hours to allow ingredients to marinate. May be made up to 24 hours in advance.
