1 1/2 c. chicken cut up (small pieces) 1 bunch sliced green onions 1 tbsp. olive oil 1 (10 oz.) pkg. frozen chopped spinach, partially thawed and drained 1 c. ricotta cheese 8 oz. Mozzarella cheese, grated 1/3 c. Parmesan cheese 1/2 tsp. garlic powder 1/4 tsp. crushed oregano 1/4 tsp. nutmeg 1/4 tsp. lemon juice 8 (7 inch) egg roll wrappers Cook chicken and onion in oil. In large bowl combine spinach and all other ingredients except egg roll wrappers. Spray with Pam cupcake tin. Line each tin with egg roll wrapper. Divide chicken mixture equally into lined cups. Fold over, brush with melted butter to seal. Bake at 350 degrees for 20 to 25 minutes or until golden. |
