APPLE GRIDDLE CAKES 
2 c. sifted flour
5 tsp. baking powder
2 tsp. salt
3 tbsp. sugar
1 tsp. cinnamon
2 c. sweet milk
6 tbsp. melted shortening, or oil
2 eggs, beaten
1 c. finely chopped unpeeled apples

Sift together flour, baking powder, salt, sugar and cinnamon. Add milk, shortening and flour mixture to eggs; beat until smooth. Fold in apples. Heat griddle until moderately hot. Grease griddle lightly before baking. Pour in about 1/4 cup batter for each cake. Bake until top is bubbly and edges dry. Turn and brown on other side. Makes 2 1/2 dozen cakes 4 to 5 inches in diameter.
