APPLE RICE GRIDDLE CAKES 
1 c. sifted flour
1 tbsp. sugar
1 tbsp. baking powder
1/2 tsp. salt
1/2 tsp. cinnamon
1/4 tsp. nutmeg
2 eggs
3/4 c. milk
1 c. finely grated apple
3/4 c. cooked rice
1/2 c. chopped nuts
2 tbsp. melted shortening

Sift dry ingredients. Beat eggs and blend in milk, apple, rice, nuts and shortening. Add dry and mix well. Cook slowly until bubbles form and edges are dry. Yield: 14 griddle cakes.
