PECAN PIE BARS | |
CRUST: 3 c. flour 1/2 c. sugar 1 c. butter 1/2 tsp. salt FILLING: 4 eggs, slightly beaten 1 1/2 c. light Karo syrup 1 1/2 c. sugar 3 tbsp. butter 1 1/2 tsp. vanilla 2 1/2 c. pecans, chopped Grease bottom and sides of 15 x 10 x 1 inch baking pan. Mix all of the crust ingredients with an electric mixer, set on medium speed until the mixture resembles coarse crumbs. Press crust mixture firmly and evenly into pan. Bake at 350 degrees for 20 minutes. While crust is baking, prepare filling. Stir eggs, corn syrup, sugar, butter and vanilla until well blended. Stir in pecans. Spread filling mixture over hot crust. Bake at 350 degrees for another 25 minutes, or until set. |
