STUFFED FLOUNDER 
1 c. minced onion, white
1 1/2 c. minced celery
1/2 c. minced shallots
3 cloves minced garlic
1/2 lb. butter
1/5 bunch chopped parsley
1 c. dry chopped boiled shrimp
1/2 c. lump crabmeat
2 tbsp. flour
1 c. milk
2 1/2 c. bread crumbs
1 c. dry white wine

Salt and pepper to taste. Saute onion, celery and garlic in butter until done; add flour and blend. Add milk and white wine, cook until thick. Add shrimp and crabmeat, finish thickening with bread crumbs.
