STUFFING FOR BAKED FLOUNDER 
1 1/2 c. crabmeat
1 onion, chopped
1 med. bell pepper
1 clove garlic
1 stick butter
Bread crumbs (plain)
Salt and pepper to taste
1 egg, beaten

Saute onion, bell pepper and garlic in butter until wilted. Add to remaining ingredients in a bowl and mix with enough bread crumbs to make it a little dry and hold together. Season to taste.

Cut a gash in the top side of the flounder from front to back. Stuff crab mixture into cavity and bake slowly at 300 degrees until fish flakes. Brush occasionally with melted butter while baking.
