STUFFED FLOUNDER 
1 med. sized flounder, 2-3 lb.
1 c. crabmeat
1 tbsp. minced onion
1 tbsp. chopped celery
1/4 c. bread crumbs
Salt
Red pepper
2 cloves garlic
4 tbsp. butter
Lemon slices
12 boiled shrimp
Parsley
1 tbsp. lemon juice

Clean and fillet flounder. Cut into 2 lengthwise slices. Salt and pepper to taste. Saute onions, celery and 1 tablespoon butter. Add crabmeat and bread crumbs, salt and pepper to taste. Allow to cook slowly in saucepan for 10 minutes. Place between slices of flounder. Soften remaining butter. Pour over flounder. Squeeze 1 tablespoon of lemon juice over this and garlic.

Cook in oven for 20-30 minutes at 375 degrees. Take from oven and squeeze garlic on fish. Garnish with lemon slices, boiled shrimp and parsley.
