RED BEANS AND RICE 
1/2 lb. beef sausage, sliced thinly
1/4 c. water
2 cans kidney beans
1 lg. onion, chopped
1 lg. bay leaf
1/8 tsp. garlic powder
1 tbsp. parsley flakes
Salt and pepper to taste
Jalapeno pepper, chopped, to taste
Rice, cooked

Place sliced sausage, water and onion in a large pot. Bring to a boil, then simmer for a few minutes. Add beans with their liquid and remaining ingredients, mix. Cover and cook for 1-2 hours, mashed beans, slightly, and stirring occasionally. Serve over rice.
