PORK OR CHICKEN IN ORANGE SAUCE 
Start rice cooking before cooking main course.

2 tbsp. orange peel
1 c. orange juice
1/4 c. soy sauce (or more if desired)
1 tsp. sugar
1/4 c. ground ginger (or fresh)

Put all of these ingredients in blender for a minute. Set aside.

2-3 thinly cut carrots
2 stalks celery, chopped
1 green pepper, cut up
4 green onions
Pea pods (optional)
1 lb. cubed pork or chicken
1/2-1 c. cashews or almonds

Stir fry vegetables in oil about 4 minutes. Remove from wok and set aside. Stir fry meat until done then add liquid and stir all until thick, then add vegetables and nuts, cover and cook through for about 2 minutes. Serve over rice. Preparation time: 15 minutes. Serves 4-6.
