MOLDED FRESH GRAPE AND AVOCADO
SALAD
 
2 env. unflavored gelatin
1 c. cold water
1 c. hot water
1/2 c. sugar
1/4 tsp. salt
1 c. fresh orange juice
1/4 c. fresh lemon juice
1 1/2 c. seeded Tokay grapes
1 c. diced avocado
salad greens
mayonnaise, optional

Soften gelatin in cold water. Stir in hot water, then add sugar and salt and stir until dissolved. Blend in orange and lemon juices. Chill until mixture begins to thicken. Fold in grapes and avocados. Turn into an oiled 5-cup mold. Chill until firm and ready to serve. Unmold on a serving plate, and garnish with salad greens. Serve with mayonnaise, if desired.

Makes 8 to 10 servings.
