CARROT-APPLE CAKE WITH CREAM
CHEESE FROSTING
 
1 1/2 c. sugar
1 c. Crisco oil
3 eggs
1 tsp. vanilla
2 c. shredded carrots
1 c. coarsely shredded cut apples
3/4 c. all-purpose flour
2 tsp. cinnamon
1 tsp. baking powder
1 tsp. baking soda (baking)
1 tsp. salt

FROSTING:

1 pkg. cream cheese, room temp.
1/3 c. butter
1 tsp. vanilla
2 c. powdered sugar

Mix together sugar, shortening, eggs and vanilla. Add apples, carrots and nuts. Add flour, cinnamon, baking powder, baking soda and salt. Pour into greased and floured pan. Bake 30 to 40 minutes at 350. Cool.

Combine ingredients for frosting and spread over cake after cake has cooled.
