MELT-IN-YOUR-MOUTH BLUEBERRY
CAKE
 
2 eggs, separated
1 c. sugar
1/2 c. shortening
1/3 c. milk
1 tsp. vanilla
1 tsp. baking powder
1 1/2 c. flour
1/2 tsp. salt
1/2 tsp. nutmeg
1 1/2 c. blueberries

Beat egg whites until soft peaks form. With same beaters, cream shortening with sugar; beat in egg yolks. Beat well. Sift dry ingredients together; add alternately with milk Add vanilla. Fold in beaten egg whites. Dust blueberries with a tablespoon of flour, stir into batter. Spread in 8 or 9 inch square pan. Sprinkle with sugar or cinnamon sugar. Bake 35 to 40 minutes in 350 degree oven. Test with toothpick.
