MELT-IN-YOUR-MOUTH BLUEBERRY
CAKE
 
2 eggs, separated
1 c. sugar
1/4 tsp. salt
1/2 c. shortening
1 tsp. vanilla
1 1/2 c. sifted flour
1 tsp. baking powder
1/3 c. milk
3 c. blueberries

Beat egg whites until stiff, add 1/4 cup sugar. Cream shortening; add salt and vanilla. Add remaining 3/4 cup sugar. Add unbeaten yolks, beat until creamy, add sifted dry ingredients alternately with milk. Fold in egg whites. Fold in blueberries. Pour into greased 8x8 inch pan. Bake at 350 degrees for about 40 minutes.
