MELT - IN - YOUR - MOUTH
BLUEBERRY CAKE
 
2 eggs, separated
1 c. sugar
1/2 c. butter
1/4 tsp. salt
1 1/2 c. flour, sifted
1 tsp. baking powder
1/3 c. milk
1 1/2 c. blueberries
1 tsp. vanilla

Preheat oven to 350 degrees. Butter an 8 inch square pan. Beat egg whites until stiff. Gradually add 1/4 cup sugar to whites. Cream butter. Add salt and vanilla. Add the remaining 3/4 cup sugar and the egg yolks. Beat until light and fluffy. Sift flour and baking powder together. Add to butter mixture, alternating with milk in 3 additions (being and end with dry ingredients). Gently fold in egg whites. (Fold in blueberries carefully.) Pour into pans. Bake 35 to 40 minutes until done. Test for doneness.
