CRAB MEAT AU GRATIN 
1 stalk celery
1 c. chopped onion
1/4 lb. butter
1/2 c. flour
1 (13 oz.) can evaporated milk
2 egg yolks
1 tsp. salt
1/2 tsp. red pepper
1/4 tsp. black pepper
1 lb. crab meat
1/2 lb. grated cheese

Saute onions and celery in butter until they are wilted. Blend flour in well. Pour in milk gradually, stirring as you pour. Add egg yolks, salt and both peppers. Cook for 5 minutes. Put crab meat in a bowl and pour sauce over meat, blend well. Put in greased dish and sprinkle with cheese. Bake at 375 degrees for 10-15 minutes until light brown.
