DATE CAKE 
3 egg whites
1/3 c. honey or apple juice
1 tsp. baking soda
1/2 c. grated carrots (2 sm. carrots)
1 c. grated zucchini (1 sm.)
1 tsp. cinnamon
1 c. water
1 c. oat bran
1 c. whole grain pastry flour
1 c. date pieces

Combine together in order given; blend with hand mixer. Pour into cake pan sprayed with non-stick. Bake in preheated 350 degree oven for 30 minutes.

DATE FROSTING:

1 c. apple juice
1/2 c. date pieces
1 tsp. vanilla
3 tbsp. tapioca granules

Blend in blender 2 minutes. Cook in saucepan 5 minutes over low heat, stirring constantly. Cool down to warm and frost cake. This outstandingly delicious cake can be served warm or room temperature. Serves 15.
