DIET CAKE 
3 egg whites
1/2 c. honey
1 tbsp. baking soda
1/2 c. grated carrots
1 c. grated zucchini squash
1 tsp. cinnamon
1 c. water
1 c. Oat Bran
1 c. whole wheat flour
1 c. date pieces

Cream egg whites, honey and baking soda. Stir in carrots and zucchini, add cinnamon, water and mix. Add bran, flour and dates while mixer is running. Pour into 2 (8 x 12 1/2 inch) round cake pans. Bake in 350 degree oven for 30 minutes. Top and fill with filling and frosting: 1 tsp. vanilla 1/2 c. dates 1 tbsp. tapioca

Blend for 2 minutes. Pour into saucepan and cook 5 minutes. Remove from heat and cool. Frost.
