CHEESY POTATOES 
2 lb. large potatoes (unpeeled), cut into 1/4-inch slices
1 medium onion, chopped fine
4 tbsp. butter, cut up
1 tsp. salt
1/4 tsp. pepper
4 oz. shredded sharp Cheddar cheese

Melt butter in large skillet. Add all ingredients except cheese. Cover and cook until potatoes are tender and browned, turning potatoes occasionally. Remove from heat. Sprinkle cheese over top and let melt. Serve.
